Why does the God of the Old testament seem so different from the God of the New Testament?

During this time, the Hebrews evolved their deity from being a tribal Canaanite god, which is modeled after the gods of their neighbors, to the Cosmic Universal God. The discrepancy in how God is portrayed in various time period reflect this evolution.
